Abstract
A tanulmányban az élelmiszeripar egésze és szakágazatai szerkezetének változását vizsgáltuk különböző ismérvek szerint. Először nemzetközi, főleg uniós összehasonlításban elemeztük a magyar élelmiszeripar koncentrációjának mértékét, az ágazat termelékenységi szintjét és eredményességét. Ezután az élelmiszeripar szakágazati szerkezetének alakulását tártuk fel különböző mutatók, köztük a külföldi tőke szerepe és a koncentráció mértéke szerint. Kiemelten foglalkoztunk a mezőgazdasághoz szorosan kapcsolódó szakágazatok (hús, baromfi, tej, malom, sütő, feldolgozott zöldség-gyümölcs, bor) vállalati szerkezetének módosulásaival, a koncentráció és a tulajdonviszonyok alakulásával, valamint az adott ágazat bel- és külpiaci viszonyaival. = The study focuses on the structural changes of the food industry as a whole and its subsectors, based on various criteria. In the first part, the level of concentration, productivity and profitability of the Hungarian food industry are analysed in an international context, particularly in comparison with other EU countries. This is followed by an investigation of the structural changes of the subsectors of the food industry on the basis of various indicators, including the role of foreign capital and concentration. The study lays particular emphasis on the changes of the business structure of the subsectors closely linked to agriculture (meat, poultry, dairy, flour milling, baking, processed fruit and vegetables, wine), changes in concentration and ownership in these subsectors and the domestic and international relations of the specific industries.
