Abstract

A tanulmány a főbb termékpályák kilátásait, versenyesélyeit mutatja be. Az ágazatspecifikus problémákat a termékpályák – tej- és marhahúsvertikum, sertés- és baromfivertikum – szintjén vizsgáltuk. Az elemzések a vásárló/fogyasztó, azaz a kereslet oldaláról indultak ki és a mezőgazdasági termeléssel zárultak. A mezőgazdasági termelés reális helyzetét ugyanis nem tárhatjuk fel az arra épülő élelmiszeripari és kereskedelmi fázis, valamint a vásárlói/fogyasztói igények és elvárások ismerete nélkül. A fogyasztás és a piac témakörében vizsgáltuk a fogyasztási szokások és a piaci trendek változását. A kereskedelem elemzésénél komoly hangsúlyt helyeztünk a külkereskedelem alakulására, a versenyelőnyökre és versenyhátrányokra, valamint a szerződéses kapcsolatok és a piaci alkupozíció változására. A feldolgozásnál elsősorban a technológiai változásokat, az innovációt, az alapanyag-termelésnél pedig a biológiai alapokat, a tartástechnológiát és a termelési mutatókat vizsgáltuk. A legsúlyosabb probléma nem ágazat-specifikus, hanem többnyire makrokörnyezeti, beleértve a magas adó- és járulékterheket, a bürokrácia túlkapásait, valamint a megoldatlan birtokpolitikai kérdéseket. = This study has presented the prospects and competitive chances of the main product paths. The sector-related problems have been discussed along the product paths – dairy and beef cattle, pork and poultry. Analyses have started out from the side of buyers/consumers – that is demand – and concluded with the assessment of agricultural production. Namely, the realistic condition of the agricultural production cannot be revealed without knowledge of the food industrial and commercial phase relying on it and of the buyers/consumers’ requirements and expectations. In connection with consumption and market, we have examined changes of the consumption habits and market trends. Great emphasis was laid on the development of foreign trade, on the competitive edges and disadvantages, as well as on the changes of the contractual relations and the market bargaining positions, when analysing the commercial issues. In connection with processing, we have principally examined the technological changes and innovation, while biological bases, raising technologies and production indices served as bases for assessing the raw material production. The most severe problem is not sector-specific, but rather concerns macro-economy, consisting above all in the high tax and contribution burdens, abuse of bureaucracy and unsolved land ownership policy issues.
